Homemade granola

I love granola, but the darn stuff is pricey.  I was reminded recently of a delicious recipe for homemade granola.

  • 1.5 cups brown sugar
  • .5 cup water
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 8 cups old fashioned oats
  • Nuts (1-2 cups of any assortment you like), coarsely chopped
  • Dried fruit (1-2 cups of any assortment you like), coarsely chopped

Preheat oven to 275 degrees.  Combine nuts and oats in a large bowl, set aside.  In a medium microwave safe bowl, combine sugar and water.  Microwave on high 1 minute and stir.  Repeat until mixture is bubbly and sugar is dissolved.  Carefully add cinnamon and vanilla; it will bubble a bit when vanilla is added.  Quickly toss with oats and nuts.  At first, it will look like there isn’t enough syrup, just keep mixing!

When everything is coated, divide oat mixture onto 2 sheet pans.  Bake in preheated oven for an hour, rotating every 15 minutes.  Remove from oven to cool for 10 minutes.

Break up granola and mix in dried fruit.  When completely cooled, store in an airtight container.

Enjoy as a cold cereal, or eat it my favorite way; top a bowl of French vanilla yogurt with a sliced banana and a big handful of this delicious granola!
